Whisk together in a separate bowl the flour, baking soda, baking powder, salt and set aside. Preheat oven to 350 degrees. Beat butter, sugar, brown sugar and vanilla in a large mixing bowl at medium speed until creamy. Add the egg and mix only until combined. Reduce speed to low and gradually add flour mixture just until incorporated. Stir in by hand the dark chocolate chips and coconut flakes. Form balls of dough to desired size and place on non stick baking sheet, roughly 1-2 inches apart, they will spread when baking. Bake for 6 minutes, rotate pan to ensure even baking, bake another 5 minutes or until you see the edges turning brown. Remove from the oven and let cookies continue to sit on the baking sheet for an additional 5-6 minutes while cooling. Remove from baking sheet, let cool and enjoy!!
